Indian Curry

I know the Japanese love curry, but it's a Japanese kind, quite different from the Indian sort. In fact, in traditional fashion, the Indian cook will mix and match from his own collection of spices - so many of them, and improvise on a theme, kind of like a jazz player, or better still as in classical Indian music. So what comes out may be slightly or even much different from any time before, the ratio and selection of the spices following on an impulse. If the cook knows what he/she is doing the results can be exciting, to be sure. I originally taught myself this kind of cooking through books, but now I've been to India many times, and all over the country, and I've picked up all kinds of things along the way. The only problem is finding the spices in Japan. You don't find the whole variety of them outside of the main cities like Tokyo or Osaka. So when I go to India I tend to stock up as much as I can, as well as does my adopted son Vijay when he visits me. Cooking any food can be exciting if it's done with skill, but Indian curry is really special for me. Have you ever tried it?
