Yuba Time

While in Nikko, I really wanted to try yuba. Yuba is the skin that forms on top of soy milk while it`s being boiled, and it is lifted off and used in certain dishes. Nikko has been making food with yuba for hundreds of years because its many monks and priests had to have an extremely strict vegetarian diet. Even though it`s not the most flavorful dish, it was fun to try all the different textures. How do you like to eat your tofu?
