hot, spicy, soft, and Chinese.

A lot of what we all know and enjoy about noodles come from the hard work and experimentation of Chinese people from over a milenia ago. It's hard to deny the variety of styles and flavors of Chinese food. For example, Toushyoumenn.

"Sword cut noodles" are pretty true to their names. The block of dough is cut over a huge pot. The noodles fall off of the block from the knife into the pot and are boiled. The soup is typically pretty hot. Lots of sesame and chili oil flavors. The noodles themselves are under-salted so that the soup and noodles contrast well. They are very very soft. Much different than Kagawan udon known for it's chewy texture.
Lucky to have a Peking style Chinese restaurant in my area.
