Vacation!

Family



Sadie and I are currently planning a vacation for my parents! We hope to be able to bring them over to Japan right after my birthday. They will be able to celebrate our one year anniversary with us! We'd like to be able to take them to several places around Japan, specially because this will be my parents first vacation ever. We were thinking of some places like Tokyo and Kyoto but would also like to do smaller, lesser known parts of Japan. We have never planned a vacation before but I'm sure it will be fun. My parents will arrive mid August, we hope to know more about Japan by that time. Our students are an untapped source of knowledge, vacation planning will make for great conversation!!! Can't wait to hear all about your great escapades.

Last Day's of Sakura



I was running out of time to go see the cherry blossoms somewhere. We'd had rain many times during sakura week and I'd been busy and tired.

On Monday, I dressed up a little and took 2 trains over to Ritsurin garden. I'd of course heard of this garden, but no one had ever invited me to go there. I've seen several parks and a few gardens in Japan so I didn't expect much. But Ritsurin surprised me, the garden was so beautiful and peaceful. I had lunch by myself, under the trees, and walked around taking pictures. It was a really wonderful place. I would take anyone visiting Kagawa, over to this garden, during any season. I'm a little surprised that no one convinced me to go there sooner.

I feel satisfied as the sakura comes to an end, but I hate that it is so short-lived.

Cooking Practice!

I am sure I have mentioned in the past that I enjoy cooking, even though I don't really get too many opportunities to practice. Well, I am writing about a recipe I tried out recently that apparently many people have enjoyed. It is called parmesan chicken breasts with lemon. If you didn't know, chicken parmesan recipes generally tend to involve tomato sauce (or marinara sauce). The reason I tried out this recipe is because my gf does not like tomatoes. Instead, we used lemon juice and zest to complement the parmesan cheese.
This recipe calls for the use of breadcrumbs, freshly grated parmesan cheese, scallions, lemon juice and zest, butter, sea salt and fresh ground pepper for a bit of seasoning, chicken breast fillets, and parsley. For those who don't know, the 'zest' of the lemon is the yellow outer skin, that when when used, adds a huge kick of flavor to foods. Just be careful when scraping off; if you scrape too much and start getting the white 'pith', you are going to add in the bitter part that won't be as enjoyable.
As for the parmesan cheese, it is either very difficult to find fresh cheese (or if possible, probably very expensive), so I just used a bottle of grated parmesan cheese you can find in the store.
