In March Gem School held it's Easter Picnic and many of the parent's in Takamatsu really enjoyed the "Cowboy Gravy" that I brought to the picnic. As per your request, I am giving you the recipe. This is the bare bones recipe and can be changed in a way that you enjoy it. I am thinking about posting some random recipes that you all might enjoy trying in the future from Texas and the South. I hope you enjoy and if you don't understand something or if you still don't know how to prepare it, I can help you out! The recipe is as follows:
Ingredients:

1. Ground meat: This can be pork, chicken, turkey, or beef and should produce a small amount of grease in the pan. I use about 250 grams of ground beef and season it with different things depending on the flavor I crave.
2. ¼ cup all purpose flour
3. 2 cups of milk: I use whole milk for this dish. It makes the gravy a bit thicker and more flavorful.
4. Salt and Pepper: To taste
Directions:
1. Before cooking your meat you want to season it how you like. This can be done using a variety of spices. It's best if you season the meat and chill it for about 3 hours before using it, but this step is not necessary.
2. In a large pan, brown your meat and drain the grease. Be sure to leave a small amount of grease in the pan so that your flour can stick to the meat.

3. Mix in your flour thoroughly.

4. On Medium heat, add milk and mix thoroughly. Do not worry about the watery consistency, as the gravy heats it will release the flour that was stuck to the meat slowly and thicken nicely. Stir regularly.

5. Once the gravy is at a nice thickness add salt and pepper or other seasonings to taste.

Note: If the gravy is too thick, add more milk and mix. If gravy is too thin, add a small amount of sifted flour and mix well.
Eat this gravy alone, over toast, country style biscuits, or potatoes. It is good over pretty much anything!
