The city of Fukuoka in Kyushu was at one time called Hakata. The city is famous for its own style of ramen called tonkotsu ramen. The soup is made with a pork bone, along with other ingredients and topped with a slice of pork called chashuu. This is what is called Hakata ramen.

It is available all over Japan, but the best Hakata style ramen shops are located in Kyushu. There are many varieties of this ramen, and the number of shops seems endless. You can start right at Hakata Station, the Bullet Train stop, where there are plenty of shops to choose from. It is quite delicious and worth a try if you make the trip to Kyushu.
